If you like shrimp then I can assure you that this recipe is sure to satisfy.
What you will need:
1 lb of uncooked peeled medium shrimp
1 Tbsp fresh minced ginger
2-3 minced garlic cloves
1/4 cup low sodium teryaki sauce
1/2 cup low sodium chicken broth
1/4 tsp crushed red pepper
2 tsp olive oil- extra virgin/cold pressed
3 cups baby broccoli florets
1 cup red bell pepper, seeds removed and sliced into strips
2 carrots thinly sliced
4 tbsp sliced scallions
1/2 cup raw peanuts
Directions:
TossĀ the shrimp together with ginger and garlic. Put in the fridge for about an hour. Mix teriyaki sauce, broth, and crushed red pepper. Heat oil in large skillet. Add shrimp mixture, cook for 3-5 minutes until they are pink.
Add teriyaki mixture, broccoli, bell pepper, carrots, and 2 tbsp scallions; mix lightly. Cook until the vegetables are tender but still crisp. Stir frequently. Add peanuts, and remaining 2 tbsp scallions. Mix lightly.
Serves 4 poeple.
