This recipe is super easy to make. The only thing that needs to be cooked are the chicken breasts.
Not only will it tantalize your taste buds but it will provide you with a good dose of protein and healthy fats all while staying nice and low on the carbs.
What you will need:
- 8 oz chicken breast
- 2 plum tomatoes chopped
- 1 small red onion chopped
- 2 fresh basil leaves chopped
- 1 clove of fresh minced garlic
- 2 pinches of salt
- 2 pinches of pepper
- 1 pinch of oregano
- 1 tbsp Extra Virgin Olive Oil
- 2 Tbsp Balsamic Vinegar
Grill the chicken breasts. While the chicken breasts are grilling, you can chop the onion, tomato and mince the garlic. Put the ingredients in a mixing bowl. Add the salt, pepper, oregano, basil, olive oil and balsamic vinegar. Mix it all together.
Serve with the chicken breast on top of the bruschetta.
Can be one or two servings depending on size of person and metabolism.
